Absolutely fabulous! An amazing experience and the best explanations one can get. The whole process is rather straightforward: there is a briefing regarding the plane at the beginning of the session, then you become the "pilot", under the direct supervision and indications of an actual pilot, hehehe. Tried both the F-16 and the Boeing 737, and out of the two, even though they are completely different experiences and completely different maneuvering styles, the most spectacular was Boeing 737.
